Deep-fried chicken skin is a favorite snack in certain parts of the Philippines, where it’s called chicharon manok. Maharlika, a new Filipino restaurant in the East Village, serves chicharon manok with spiced sugar cane vinegar as a free pre-dinner treat until they run out of it (they do most nights). Nicole Ponseca, an owner of Maharlika, said the restaurant’s dish is a strictly traditional version of the snack, which she grew up eating while playing mah-jongg with her family.

The official culture of he public world is western. It is constitutional, democratic, Roman Catholic. Its legal system is in English. So is the serious press. Public school is bilingual. Global fads and fancies are easily - often eagerly - adopted. The appearance of things is make-believe. Some of it is mere veneer. The point of it is, of course, that it all is Filipino, and that we have to take in how people live with it, how they interpret and understand it themselves.

Angola beauty is 2011 Miss Universe; Shamcey is 3rd runner-upvia ABS-CBN News
Miss Angola’s Leila Lopes was crowned Miss Universe for 2011 in the competition held in Sao Paulo, Brazil Monday night (Tuesday morning in Manila). Shamcey Supsup, a 25-year-old beauty from the Philippines, was the third runner-up for the pageant.
Tony Award winner Lea Salonga asked Lopes the final question that would help her win the pageant. She asked Lopes: “If you could change one of your personal characteristics, which one would it be and why?”
Lopes replied: “Thank God, I’m very well satisfied with the way God created me and I would not change a thing. I consider myself a woman with inner beauty. I have my principles. I have acquired many wonderful principles from my family and I plan to follow this through the rest of my life.”
Supsup, meanwhile, was one of the strongest contestants in the competition, placing first in the final fan rankings. In the crucial question and answer portion, she said she would not change her religion just to marry the person she loves.
“If I had to change my religious beliefs, I would not marry the person that I love because the first person that I love is God who created me and I have my faith and my principles and this is what makes me who I am. And if that person loves me, he should love my God too,” Supsup said.

Philippine jeepneys nearing end of a colorful road
The iconic Filipino people carrier is losing its luster as owners ditch art to save cash
In a dusty workshop in the town of Angono, just outside Manila, an artist glances up at a poster from the Disney animation “Tangled.”
He compares it with the image of the film’s strong-jawed hero, which he is airbrushing onto the side of an old jeepney.
The artwork has been commissioned by the owner of the jeepney, and will be a brash, ostentatious statement that he no doubt hopes will mark his vehicle out from every other.
“This will be finished later today,” says Damaso Reyes, owner of Dasoy Motors, the small auto workshop charged with completing the design.
Reyes will make a small profit for his work. For some, however, the scene here is a sign of the decay that is affecting Filipino jeepney art.
Disney characters and U.S. flags are now the commonplace stars of these colorful buses, when once they used to be mountains, rivers and other natural Filipino characteristics.
Additionally, from being one of the most enduring and endearing legacies from the time the U.S. Army spent in the Philippines during World War II, jeepneys are now in danger of losing their artistry altogether, as owners prioritize finance over flourish.
